Cuisine course in Mirepoix - between mountains and plains in the rolling hills of the lower Ariège.

 

4* hotel in the lower AriègeThe lower Ariège valley is at the crossroads of history and culture in SW France. To the east lies the Aude and a dry mediterranean climate. To the west, the valley of the Garonne bringing mild wetter weather from the distant Atlantic.

 

In the foothills of the Pyrenean range, towns like Pamiers, Foix and Mirepoix were host to migrants and travellers moving east-west or, more rarely, north-south over the mountains from Spain.

 

The result is a culture and cuisine rich in influence and colour. Our 4 night course can only begin to do it justice.

 

The course takes place in a luxury 4* hotel in the mediaeval village of Mirepoix with its half-timbered houses and squares largely unspoilt since the 16th century.
